Wilted Spinach Salad with Poached Egg
Today I went to make a salad for myself, but wasn’t looking forward to another bowl of just veggies. I wanted something more. I flipped through a Cooking Light’s The Complete Quick Cook and found a spinach salad with a poached egg that looked intriguing, but there were a few ingredients on the list I…

This evening I decided to give a store-bought soup a try and was definitely pleased. This V-8 Southwestern Corn soup has only 3 thick, delicious Weight Watchers Points Plus a serving. After my amazing weight loss victory from last week, I continued to lose another pound… until I boarded the plane for California last Thursday for an amazing long weekend in the wine country. Recipes from a delightful ladies’ lunch
A few days before Easter I was invited to a luncheon with some pretty spectacular ladies. Our hostess made this adorable edible bunny dip with a bread bowl, rolls, veggies and some spinach dip: It was too cute to just keep for ourselves. I had to share! And look at her centerpiece for just one…

This week I used one of my favorite salad dressings EVER with some of the traditional stuff: “What is all that healthy deliciousness?” you ask… Red Lettuce Spinach Roma Tomatoes A smidgen of yellow onion and reduced-fat Feta Cheese (I still had some in the fridge so on the salad it went!) I also sprinkled…

Salad Saturday #3
This week I didn’t eat much salad. I only had one small side salad at a restaurant last night, and although good, it wasn’t all that creative: (arugula, red lettuce, cucumbers, tomatoes, croutons and a vinaigrette) This week I did increase my veggies in other ways, though. One day for lunch I heated up a…

Salad Saturday #2
My apologies to those among us who do not like fruit on your salad. Here’s another fruity one: This week I intended to have basic taco salad, but, as I was cutting fruit for my kids to enjoy with their tacos, I got a little creative. And then I wanted some. First, I chopped apples,…

Another yummy soup
I just made this delicious Butternut Squash soup and oh my goodnes is it good! This was my first butternut squash experience, too, and I am so glad I branched out. The soup is rich, creamy, filling and, if you use fat free chicken broth, only 4 WW points per 1 cup serving. Cha-ching!
