Many years ago, when I was a sweet little undergrad at the University of Florida, (I can’t help but to fit that UF thing in a lot right now. Go Gators! Anyhow, back to the story…) I loved to bake a secret peanut butter and chocolate cookie.
These cookies ROCKED. A little crispy yet still a tad chewy chocolate on the outside and peanut butter filling on the inside. Mmmmmmmm.
I remember making them and mailing them to my brother in the Navy who said they were all destroyed by the time they reached him. I was devastated. He did not get to experience the pure deliciousness of the cookie.
Anyhow, somehow the recipe was lost… and I thought lost forever. I searched for this recipe in every cookbook and magazine I could get my hands on. And then when we got this internet thing, I searched and Googled and longed. But to no avail. My secret recipe remained that: a secret.
A few years back I tried my best to duplicate the recipe and came pretty darn close, but not close enough.
And tonight, while doing important research (well, kind of) I found the recipe on the King Arthur Flour website! (Yet another reason to be thankful my sister-in-law introduced me to bread-baking! I only get their emails because I bought her a pan there last Christmas.) The cookies are called Magic in the Middles and magic they are.
Alleluia! Alleluia! Al-le-lu-ia!!! ( Do you hear the angels singing?)
I’m telling you girls, if you want to make a good cookie, this is the one. And if you are planning to go to the same cookie exchange where I will be this Sunday: Hands off this recipe until after the competition. I’m taking home the prize.

And ya know what… I might try a variation, too. I wonder how they would do with a half of a Peppermint Patty inside instead of the peanut butter mixture. Hmmmm.
