We are about to sit down to a dinner my neighbor once shared with me. It is super easy and my whole family gives it two thumbs up:
Stir Fry Rice Noodles with Chicken, Broccoli and Asparagus
½ lb thin rice noodles (We use A Taste of Thai)
3 Tablespoons oil
10 cloves garlic, minced
1 ¾ lb chicken breast, thinly sliced
2 Tablespoons Garlic Chili Pepper Sauce
2 teaspoons salt
4 Tablespoons soy sauce
2 Tablspoons brown sugar
About 2 cups chopped broccoli
About 1 cup sliced asparagus spears
- Soak noodles according to package directions for stir-fry. (Pour noodles into bowl and cover with very hot tap water. Soak for 15-20 minutes. Drain noodles.)
- Heat oil in very large skillet over medium high heat.
- Add garlic and stir-fry until golden
- Add salt and chicken. Stir-fry until done.
- Add soy sauce, garlic chili pepper sauce and brown sugar. Mix until sugar is dissolved.
- Add drained noodles and veggies.
- Stir-fry until noodles are firm but tender.
PS… It’s gluten-free, too.
