Crockpot Aztec Chicken

Aztec Chicken

Place enough boneless chicken breasts to feed your family in the crockpot. (I use about 4, or 1lb)
Pour in frozen corn and a can of black beans and then cover with salsa

Cook on high for 4 hours, or on low for 6-8.

30 minutes before you are ready to serve, shred the chicken, it will be VERY tender.

Then put 8 oz of cream cheese in with the mixture and stir.

Continue tocook for 30 minutes.

Add cooked rice to the mixture to stretch the meat a little further.

We like to serve just like a taco/fajita bar with tortillas, lettuce, cheese, sour cream…whatever you normally like on your taco.
