Company coming and want to impress? Or maybe you need to pull a quick dinner together, but still want it to be special?
For the past four weeks I’ve been participating in a promotion with the Texas Beef Council and it has really opened my eyes to beef and how easy is really is to cook! Plus, I always assumed I needed to stick with chicken or pork to lose weight, but beef can be a great option, too.
My latest meal, Beef Steaks with Peppercorn Wine Sauce, was easy to make and all of my family (husband and three kids ages 5, 8 and 10) gave it a thumbs up. Plus, the entire meal took about 25 minutes to make and all the ingredients were things I typically keep on hand (except the beef) so I could keep filets in the freezer and be prepared at any time.
Here’s the recipe, courtesy of the Texas Beef Council:
Beef Steaks with Peppercorn Wine Sauce
Ingredients
4 tenderloin steaks, cut 1 inch thick
1 1/2 tsp. cornstarch
1 cup ready-to-serve beef broth
1/8 tsp. dried thyme leaves
1 small bay leaf
2 Tbsp. dry red wine
1/8 tsp. black peppercorns, crushed
Instructions
Heat large heavy skillet over medium heat 5 minutes. Place beef steaks in skillet and cook 8 to 10 minutes for rare (140°F) to medium (160°F), turning once. Meanwhile, dissolve cornstarch in broth in small saucepan. Bring to a boil and cook until slightly thickened, about 1 minute. Stir in thyme and bay leaf. Reduce heat to medium and cook until mixture is reduced to approximately 1/2 cup, about 5 minutes. Stir in wine and peppercorns; cook 3 minutes, stirring occasionally. Remove bay leaf. Spoon over steaks.
