Grandma’s Corn Chowder
2 TBS Butter
Medium Onion (chopped)
Medium Bell Pepper (Chopped)
14 oz Chicken Broth (home made/can is up to you)
2 Medium Potatoes, diced
2 TBS Dijon Mustard
1 tsp Paprika
½ tsp Red Pepper Flakes (or more)
1 Jalapeno Pepper
3 Cups Corn (frozen or can will work)
1 tsp Salt
4 Cups Milk
Saute/brown Onion and Bell Pepper in the butter.
Add chicken broth and potatoes. Cook for 15 minutes (until potatoes are tender).
Add remaining ingredients (except ½ cup of milk)
Bring to a boil (especially if you are using corn, but not too long so the milk does not curdle).
In a separate pot, you need to mix rue using ½ cup of milk and flour (about 2 TBS with regular flour….less of freshly ground flour)
Once the corn is cooked and rue is ready, mix rue in with other ingredients.
You can add ham, cheese…..but, it is really yummy even without extras!!
