Lighter and Easy Canadian Bacon and Cheese Quiche

I first pulled this together when I hadn’t planned well and didn’t want to go the grocery store. I modified and lightened up another quiche recipe I found and this quickly became a favorite in our family. It’s easy to make, uses ingredients we typically have on hand and even reheats well (if you have any left!).

Lighter and Easy Canadian Bacon and Cheese Quiche

Ingredients:

1 1/4 cups Heart Smart Bisquick mix

1/4 cup butter, softened

2 Tablespoons water, boiling

6 oz. sliced Canadian Bacon

1 cup shredded 2% milk mexican blend cheese

1 1/2 cups whole milk

3 eggs

1/2 teaspoon salt

1/2 teaspoon pepper

** or instead of the salt and pepper, use a few cranks of a pepper and garlic blend

Instructions:

Preheat the oven to 400.

Grease bottom and side of a 9-inch pie pan. (I use Pam.)

Stir Bisquick and butter until well-mixed, then add 2 Tablespoons of boiling water. Stir until a soft dough forms. Press dough into and up the sides of prepared pie pan.

Sprinkle Canadian bacon then cheese over dough.

Whisk the milk, eggs and seasoning in a bowl and pour over into the crust.

Bake 35-40 minutes, until the edge is golden brown and center is set.
