Dinner: Honey Pecan Chicken, brocolli
Honey Pecan Chicken
½ cup pecans
2 Tablespoons cornflake crumbs
2 Tablespoons honey
1 Tablespoon reduced sodium soy sauce
4 5-ounce chicken breasts
Non-stick spray
1 Preheat oven to 425. Line baking sheet with foil.
2. Finely chop pecans in food processor. Combine with cornflake crumbs and sprinkle onto waxed paper.
3. Combine honey and soy sauce in shallow bowl.
4. Dip each chicken breast into the honey-soy mixture then into the cornflake-pecan mixture to coat.
5. Arrange on baking pan and spray lightly with non-stick spray.
6. Bake until chicken is cooked through, about 5 minutes each side.
****oops! I forgot to check my pantry well, so I’m using Wheaties instead of cornflakes and walnuts instead of pecans.

Maple-brined porkchops, applesauce and corn for dinner

Applesauce oatmeal for breakfast
Kid dinner of fish sticks, carrots, fruit salad

Whole chicken with veggies in a crockpot, rice for dinner

Oatmeal for breakfast
Mini burgers or leftover chicken (individual choice) for dinner
Saturday
Breakfast with Santa
Pizza for dinner
Sunday
Muffins for breakfast
Tacos for dinner
