This week I didn’t eat much salad. I only had one small side salad at a restaurant last night, and although good, it wasn’t all that creative:
(arugula, red lettuce, cucumbers, tomatoes, croutons and a vinaigrette)
This week I did increase my veggies in other ways, though.
One day for lunch I heated up a Lean Cuisine and enhanced it with a cup of spinach and a handful of mushrooms. Basically, I followed the directions on the package to heat it, except I added my veggie boost after the first heat up. To do this I moved the food to a microwave-safe bowl dish with a lid, added the veggies and stirred and then finished the heating process as directed. The veggies helped make the meal more filling and added nutritional value.
Earlier in the week I served spinach and asparagus to my kids with dinner. All three hesitated at all that new green stuff. When I told the boys that the asparagus might make their pee-pee smell kinda crazy, they had to have some! This was pretty funny at dinner, but a little embarrassing as they told their friends at school the next morning in front of the parents. Oh well.
So, sorry I don’t have a creative salad for you, but I hope I’ve given you some ideas for increasing your veggie intake, nonetheless.
