I made a simple tuna salad this week, taking a packet of tunafish (in water, not oil) and combined it with:
a little fat free Miracle Whip
the equivalent amount of fat-free plain yogurt
crushed walnuts
chopped apple
Then after a big bike ride on Sunday I served it over romaine lettuce and spinach.
The next day I still had some of the tuna mixture left so I served it over red lettuce and spinach, adding strawberries and blueberries and a touch of Brianna’s Home Style Blush Wine Vinaigrette.
