My mother used to make this when my father was not home for dinner. We loved it. My kids love it.
Hope I get it right—doesn’t have to be exact. This is enough for about 8 big servings, I think.
I use “light” versions of ingredients to make it lighter.
- 2-3 lbs lean ground beef
- 2 pkgs taco seasoning—medium at least
- Salt and pepper to taste
- 2 cups corn (I use frozen)
- 2 cans refried beans or black beans
- 1 c sour cream
- 1 lb shredded cheese—Mexican mix is best
- 2 c crumbled tortilla chips
Brown meat. Add taco seasoning per directions. Salt and pepper.
Add corn and heat. Add beans, mix well, heat. Add sour cream, mix well, heat.
Add ½ the cheese, mix well.
Crumble chips into bottom of large dish. Pour mixture into bowl. Make sure it has enough “juiciness” because the chips will absorb a lot. Heat at 350 for about 30 min.
Take out, sprinkle rest of cheese on top, heat until cheese is melted.
It is even better the second day.
